How long to roast the coffee depends on how much you want to roast it. It also depends on the method and the temperature. About halfway down the page on this link is a good explanation of the phases of coffee roasting (see step 3): http://www.sweetmarias.com/instructions.php . And, coffee roasting is kind of an art. Professional and artisan coffee roasters develop a feel for when the coffee is roasted perfectly and, in the case of a darker roast, when exactly to stop the roasting process before burning out all the sugars in the beans. So, I would only do a small amount at a time, testing out various methods, and roasting times and temperatures until you get it right. Otherwise, if you screw up the first time with the whole batch, you'll have to go get more Green Coffee Beans before you can try it again.
