I roast my own coffee beans. I also get purified water at a water store. The strange thing is that my fresh roasted coffee tastes great made with my tap water which is not purified or filtered, but made with the purified water it tastes so acidy that we can't drink it. I have tried green bean coffee blends from two different companies..........with the same result. I want to use purified water, but I don't like the coffee flavor I end up with. Any coffee experts out there that can help me? Any referals to a good Green Coffee Bean that produces a good coffee flavor when used with purified water? :)

The chlorine in tap water is alkaline. It neutralizes the acid in coffee.

Our pet cat won't go near tap water and prefers to drink from the muddy garden puddles instead, so we leave dishes of rain water about. When we go down to Somerset for the weekend, the tap water there makes a really delicious cup of tea.
ReplyDeleteInteresting problem there. The coffee company I work for recommends that you filter your tap water to get rid of many of the impurities, so the purified water should be BETTER not worse. Never thought about the chlorine issue suggested by a previous answer. But what kind of beans do you use, and how do you roast them? Each different type of coffee has different characteristics and the level of roasting can also make a difference. If the coffee is too acidic, you might try a South American or Central American coffee bean; We particularly like a Costa Rican bean that we have. Brazils and Guatemalans can be pretty low in acid as well.

ReplyDeleteThat's propably a mix of the chlorine and mineral contained in your tap water that reduce coffee acidity. These mineral are no good for your espresso machine anyway. I suggest you simply change you coffee bean type for one that suit more your taste using filtered water ( not SPRING WATER THAT CONTAIN EVEN MORE MINERAL THEN TAP).
you can install a inverse osmosis with ceramic filter device in you tap water system. that way you can avoid buying the water at dealer store. dont forget mineral in water do the same to your system as they do in espresso machine, they clog it.
