  1. great thing about chili..... you can experiment with it and make it however you feel.

Try some basic chili, Beans, Meat, seasonings, then add what ever you like.

  2. 2 lbs of ground chuck, one large can diced tomatoes, one medium can of tomato sauce, two cans of chili beans, one can of black beans, chili powder, onion powder, salt, and mexican flour.(Use your own taste on how much of each pwdered ingredient to use, same with the salt) I brown the beef, drain the grease, pour all of the contents into a pot, and simmer. I do not add the mexican flour until I have it simmering, because it will thicken it up. I DO NOT drain the juices out of the cans(except for the black beans), I include them in the mix. I have also added cajun spices to add a little kick to it as well. I let it simmer for about 1-2 hours, and it's ready to go.

  3. If your like most of us, you are a busy person with little time for cooking. Especially things that would normally take all day.

I have found that the makers of "Bush Beans", makes a chili that is extremely good. It comes in a can and it comes in hot or mild., or a Texas version. You just add the meat. I use this and have had soooo many compliments on my chili........LOL

Now they also make one in a jar that is premade but that isn't the one I'm talking about. Use the one in the can that you just add the meat.

  5. Take rump roast ans cube it in small pieces about a pound or two.
Brown it in small batches so it gets crispy and brown on the edges.
Put in a pot and add 2 small cans of tomato sacue and add
the amount of chili powder you like. You can add oinios and peppers if you like them or picanti scaue. Let that simmer for a couple of hours so the beef gets very tender then add the beans you like. I use chili and black beans with the sauce in the cans and heat then serve.
    Easy and really good.

  6. There is a good Chicken Chilli that the Barefoot Contessa did. Search for it on the foodnetwork.
She oven roasted chicken breasts, but I think grilling a chicken breast on the George Forman grill would be just as good!

  7. Here you go.

    Greg's Chili
    3 tbs bacon grease
    1/2 cup onion chopped
    1 - 2 cloves garlic, chopped
Kosher salt and ground black pepper to taste
1 - 2 lbs ground beef (or 1 lb ground beef and 1 lb ground pork)
1 can (14 0z) diced tomatoes (with or without jalapenos) with liquid
1 can red kidney beans (with the liquid)
1 can pinto beans (with the liquid)
    1 bay leaf
    1 - 2 tsp sugar or splenda
    1/4 cup red wine
    2 tbs chili powder
    2 tsps cumin

Melt bacon grease in a large pot on the stove, add onions, season with a little salt and pepper, and saute until translucent. Add garlic and saute 1 minute more (burnt garlic will taste bitter).
Season the meat with salt and pepper. Add ground meats to pot and brown the meat. Add tomatoes, beans, bay leaf sugar, wine, chili powder and cumin. Season again with some salt and pepper. Remember if in doubt, go light with your seasonings as you can always add later but you can't take out. Bring all to a boil, cover and simmer at least one hour. The longer you can let it simmer the more flavorful it will taste. Taste and add more salt and pepper if needed. Remove bay leaf before serving.

That's it. Eat and enjoy. If you use the diced tomatoes with jalapenos I think you will find what you're looking for. It will be spicy but it won't set your mouth on fire. I like to put a large spoonful of rice in my bowl and pour the chili over it and/or serve with nice fresh rolls and butter. If you think it's tastes good, wait until the next day, it will be even better tomorrow.

  9. This is a real simple (my own creative) receipe. I brown about 2 lbs of hamburger meat. When meat is done, drain off the fat. (grease). Add 2 packs of chili seasoning mixes. You have to mix about 1 & 3/4 cup of water and let it simmer for about 10 minutes. Then add about a 2 tablespoons of brown vinegar, and about 2 tablespoons of sugar. (I know that sounds sorta gross, but it just lessens the acidity in the tomato juice that you're about to add). Then add a tall can of Tomato juice ( I think it's the 32 oz or either a 44 oz can). Bring it to a small boil, and then you can add whatever size you like of petite diced tomatoes, and a can of beans (like light or dark red kidney beans, or a can of pinto beans). One of my kids doesn't like tomatoes, and the other one doesn't like beans, so normally I don't cook either one in it, but you could also add some chopped bell peppers & onions in it. If you add the pepper & onions, let the chili simmer until the pepper and onions are done (approximately 20 minutes). Then when you pour it in your bowl, garnish with shredded cheese, a spoon or two of sour cream, a couple of jalenpeno (probably misspelled) peppers slices and serve with corn chips, cornbread, or saltine crackers. Enjoy!
